In 1985, the Italian agronomist and winemaker Paolo Paoloni arrived in Mexico to oversee production at the Valle Redondo winery in Aguascalientes. In 1997, Paoloni, now with experience from both Tuscany and Aguascalientes, bought 38 hectares in Valle de Guadalupe and founded the winery with the motto: “Mexican wines with an Italian heart”.
The vineyard boasts a terrace with a stunning panoramic view, and a cellar excavated into 22 feet of granite. Villa Montefiori produces around ten labels, mostly young wines and reds made from two grape strains (principally Italian vines, of course). The premium line, named Paoloni, has monovarietal wines from the Italian strains Nebbiolo, Sangiovese Grosso and Aglianico, aged between 8 and 18 months in new French oak barrels.
