Sip Aguamiel and Give It the Scorpion Test

In Hacienda Soltepec, ask for a quick tour of the estate. Here, they make a very special pulque. It is one of a very few that have what is called the “semilla” (seed)—that is, the purest aguamiel fermented spontaneously outdoors in the shade.

Ask to see how to do the “alacrán,” or scorpion, test with the last sip in the glass. If it doesn’t turn out, it isn’t a good pulque.
