
Savor an Exquisite Guacamaya

They say that if you go to León and you don’t try a guacamaya… you guessed it: then you might as well not have been. Guacamayas are an authentic local dish comprised of a torta de chicharrón (crackling sandwich) with cueritos (pickled pig skin), covered in spicy salsa and served with pico de gallo (diced tomato, onion, and chile with lime juice). You can find the stalls selling these on practically every corner of the city, in markets and outside churches. There are variations; some include avocado, La Bautizada has chile de árbol, there are others with picadillo (minced beef) or requesón (white soft cheese). Forget about the diet and enjoy a couple!
