Sample Local Dishes
The list of traditional local dishes is long. There are all kinds of tamales: ash tamales toasted in ashes, ones stuffed with tender barbacoa meat, tarasco tamales filled with tiny silverside fish, uchepos (sweet steamed corn dough), and corundas (savory pyramids of steamed dough). White fish, tiny silverside fish called charales, and tarasca vegetable soup are regional specialties. Less famous, but just as flavorful, are the meat and vegetable stew known as olla podrida, hot corn atole drinks, and local desserts, such as crispy fried buñuelos dripping with syrup made from unrefined sugar, caramelized milk ice creams, and canned and jellied fruit.
